If you’re looking for an easy and delicious recipe that’s also healthy – try this edamame salsa! Unfreeze some stuff, dump it in a bowl, buy some chips and you’re done. My (adult) kids like this recipe with pita chips and even on cucumbers. Enjoy!
- 1 c frozen, shelled edamame, thawed
- 1 c (about 5 oz) frozen corn, thawed
- 1c cubed avacado
- 1 c pico de gallo
Combine everything until well blended. Serve with cucumber and tortilla chips for dipping. Some in our family don’t appreciate avocados so sometimes I leave it out and it’s just as good. For the pico, I buy the fresh salsa like the Fiesta brand 16oz. I use it all in this recipe and I really like the ratio.
