My entire family loves this recipe and I included it as part of the Christmas gift I gave my daughter and daughter-in-law last year (a hand-written recipe book). I always double the batch for my husband and I. They’re great for breakfast with coffee or a little pick-me-up in the afternoon. They’re actually pretty good with wine, too, and seem healthier than a candy bar!

  • 1 c old-fashioned oats
  • 1/3 c honey
  • 1/2 c chunky peanut butter (I use Smuckers natural)
  • 1/2 c mini chocolate chips
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla

I like to mix the dry ingredients in one bowl and the peanut butter, vanilla and and honey in another then combine and mix well.  Form into balls and refrigerate.

I use the medium Pampered chef scoop. If you don’t have this gadget, it comes in three sizes and I use all three – very handy!
