This is a recipe that’s easy and everyone always enjoys. I tend to make it for tailgates in the fall but have also used it for family holidays.

It’s also a recipe where you can brown a bunch of hamburger at once and use it for multiple recipes. I always do this one and my lasagna together so I can save on the hamburger and it’s easier! The three pounds you need for this recipe goes in the freezer. Just pull it out and thaw it when you’re ready to make soup.

Ingredients

  • 3 pounds of ground beef (I like Fareway’s “our own”)
  • 1/2 cup chopped onion
  • 1 chopped green pepper
  • 2 envelopes of taco seasoning
  • 2 cups of water
  • 1 large can of tomato juice
  • 1 large can of diced tomatoes
  • 1 tablespoon of sugar
  • 1 small can of tomato paste
  • Salt and pepper to taste (while browning beef)

Instructions

Brown the ground beef, onions and green pepper. Add salt and pepper to taste. Drain it. Add taco seasoning and two cups of water. Simmer as directed on the package. If you plan to freeze the mixture, you can do that now. Then unthaw it and add the rest when you’re ready to use it. If you don’t need to freeze it, keep going!

Put the mixture in a crock pot and add tomatoes, tomato juice and sugar. Keep it on low for a few hours. Before you serve it, stir in the tomato paste until it dissolves.

Have crushed Doritos, grated cheese, olives (if you like them!) and sour cream on hand for toppings.
